Chicken Broccoli Pasta

Written by

Chicken broccoli pasta is a comforting and satisfying dish that combines tender chicken, crisp broccoli, and pasta in a creamy sauce. Here’s a simple recipe for chicken broccoli pasta:

Ingredients:

  • 8 oz (225g) pasta (such as penne, fettuccine, or farfalle)
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 head broccoli, cut into florets
  • 1 cup (240ml) chicken broth
  • 1 cup (240ml) heavy cream
  • 1/2 cup (50g) grated Parmesan cheese
  • Red pepper flakes (optional, for added spice)
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Cook the pasta according to the package instructions until al dente. Drain and set aside.
  2. Season the chicken pieces with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 6-8 minutes. Remove the chicken from the skillet and set aside.
  4. In the same skillet, add minced garlic and cook for about 1 minute, until fragrant.
  5. Add broccoli florets to the skillet and sauté for 3-4 minutes, until they are tender-crisp.
  6. Pour in the chicken broth and bring to a simmer. Let it cook for 2-3 minutes.
  7. Reduce the heat to medium-low and stir in the heavy cream and grated Parmesan cheese. Cook for another 2-3 minutes, stirring occasionally, until the sauce thickens slightly.
  8. Add the cooked pasta and cooked chicken to the skillet, tossing everything together until the pasta and chicken are coated evenly with the sauce.
  9. If desired, add a pinch of red pepper flakes for a hint of spice.
  10. Garnish with chopped fresh parsley before serving.
  11. Serve hot and enjoy your creamy chicken broccoli pasta!
