Skillet Pork Chops with Mushroom Gravy

These smothered pork chops with mushroom gravy are a delightful way to serve pork chops in a skillet dish your family will love! Pork chops are browned, and a pan sauce is made in the same skillet. Return the chops to the skillet for a short time as the sauce develops. We like this with mashed potatoes and a crusty bread, to catch every smidge of that tasty sauce! A green salad or vegetable rounds out the meal.

Ingredients:

  • 4 bone-in pork chops
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced (cremini or button mushrooms work well)
  • 2 tablespoons all-purpose flour
  • 1 cup chicken or vegetable broth
  • 1/2 cup heavy cream
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Chopped fresh parsley for garnish (optional)

Instructions:

  1. Season the pork chops generously with salt and pepper on both sides.
  2. Heat the olive oil in a large skillet over medium-high heat. Once hot, add the pork chops to the skillet and sear them for about 3-4 minutes on each side, or until they are golden brown and cooked through. Remove the pork chops from the skillet and set them aside on a plate.
  3. In the same skillet, add the butter. Once melted, add the chopped onion and sauté for 2-3 minutes until translucent. Add the minced garlic and sliced mushrooms to the skillet and cook for another 5-6 minutes, or until the mushrooms are browned and tender.
  4. Sprinkle the flour over the mushrooms and stir to combine. Cook for 1-2 minutes to cook off the raw flavor of the flour.
  5. Slowly pour in the chicken or vegetable broth while stirring constantly to prevent lumps from forming. Allow the mixture to come to a simmer, then reduce the heat to medium-low.
  6. Stir in the heavy cream, dried thyme, and dried rosemary. Let the gravy simmer for a few minutes until it thickens slightly.
  7. Return the pork chops to the skillet, nestling them into the mushroom gravy. Spoon some of the gravy over the pork chops.
  8. Cover the skillet with a lid and let the pork chops simmer in the gravy for another 5-10 minutes, or until they are heated through and the flavors have melded together.
  9. Serve the skillet pork chops with mushroom gravy hot, garnished with chopped fresh parsley if desired. Enjoy!
